Snack Attack: Shrimp (or Chicken) Mini Tacos

This week we will be making delicious tacos! You will need:

- 1 peach, peeled and finely diced

- 2 tablespoons finely chopped red onion

- 1 small jalapeno pepper, finely chopped (optional)

- Juice of 1 lime

- 1 tablespoon chopped fresh parsley or cilantro

- 1 clove garlic, minced

- 1/2 teaspoon salt

- 8 (6-inch) flour tortillas

- 1 tablespoon vegetable oil

- 1 pound medium raw shrimp, peeled, deveined and cut into small pieces OR 1 pound chicken (can be canned or rotisserie)

- 2 teaspoons chili powder
